Awesome catfish from the oven in less than 30 mintues. Great for weeknight meals.
- 6 nice catfish filets
- 2 cups dry bread crumbs
- 3/4 cup Parmesan cheese
- 1/4 cup chopped parsley
- 1 tsp Paprika
- 1/2 tsp oregano
- 1/4 tsp basil
- 2 tsp salt
- 1/2 tps pepper
- 3/4 cup – half melted butter, half olive oil
Method:
Combine bread crumbs with next 7 ingredients. Dip catfish in melted buter/oil and then in crumb mixture. Arrange fish in a well-greased baking dish about 14″ x 9″ x 2″. Bake @ 425 for 15 to 20 minutes or until fish flakes easily. Garnish with lemon wedges.

Simple fish recipe:
Take a glass cake pan and pour some Italian dressing into it just enough to cover the bottom of it then take your fillets….I lke to thin mine to about a quarter inch thick…and make sure that the dressing gets on soth sides of the fillet then lay it flat in the pan ….the sprinkle Tony’s Creole seasoning on top of fish to taste….I like mine a little spicy….then stick them in the ovenfor about 30 minutes at 350 degrees and enjoy !!!!!!
